Cast Iron Skillet Grilled Rigatoni {Blog Rewind}

Since I moved back to Blogger (after being on Typepad for over five years) I have gained a lot of new followers, which makes me so happy! This has made me eager to start a new series with you called {Blog Rewind}, where I will be sharing portions of posts from my former Typepad blog, and today I have the first. A couple of years ago, I shared a quick and easy summertime meal for grilled rigatoni and am sharing an updated version here.

My husband and I are pretty obsessed with cast iron cookware. We use it for about 75% of our cooking. Making this grilled rigatoni was the first time we ever tried it out on my husband’s charcoal grill, however. Since that time, we have grilled with cast iron often in the warmer months. I am already looking forward to doing new recipes with it this summer.

This is a quick and easy meal (perfect for busy, but hungry parents and their kiddos).

Ingredients:
1 16 oz. box of rigatoni pasta
1  24 oz. jar of pasta sauce (you may want to add more if it seems too dry for your liking)
1 15 oz. container of part skim ricotta cheese
Approx. 1 1/2 – 2 cups of shredded mozzarella cheese (depending on how cheesy you like it!)
Directions:
Preheat grill. Use indirect grilling for this recipe (for charcoal grills place coals on either side – not directly below pan).
Meanwhile, cook pasta according to package (till al dente) on the stovetop. 
Lightly coat a large cast iron pan with olive oil. 
Drain pasta and combine with sauce and ricotta in a large bowl. 
Transfer mixture into cast iron pan and top with mozzarella.

Finish by sprinkling with parsley (optional).

Place pan on grill and cook for approximately 25-30 minutes, with lid closed, until cheese is melted and pasta is lightly browned and crispy around the edges. 

Use caution when removing the pan…it will be hot!

You could whip up a quick salad while pasta is baking and during the last several minutes of cook time, place slices of buttered garlic bread face down on grill for 2-3 minutes on each side (directly above heat). Now, you have an easy and delicious meal done in under an hour!
