Summertime Cooking: Grilled Rigatoni
When my husband and I were first married, he talked often about getting a cast iron skillet.
It took us four years to finally invest in one, but once we did, I was hooked.
We now have two skillets and a large casserole dish which all get a lot of use around here.
When Hazel was in the hospital, we came home one day to find our oven dead.
Since we were busy running back and forth to the hospital each day with little time to care for much else,
we simply used the microwave and stovetop while at home.
This was when the cast iron cookware came in very handy. I made many a dish in them during that time.
We eventually invested in a new stove (which I love), but the cast iron cookware remains my favorite.
Since it has been so hot these past few weeks, we decided to start trying our favorite recipes on the grill,
to keep the house cool with the oven off.
Last night we made baked rigatoni in our very large skillet…
It was so easy! I simply put a jar of sauce, ricotta cheese and cooked rigatoni in a bowl and then threw it all in the skillet.
Topped it off with some mozzarella cheese and a bit of parsley…and voila!
My husband sure loves his charcoal grill…
While we waited for it to cook, we enjoyed some family time playing in the yard…
Hazel liked being free to explore in the grass…
While Renoir enjoyed hanging out with us too…
After about 25 minutes our dinner was ready…
and it was delicious…perfectly browned and crispy around the edges (my favorite part)…
Can't wait to try more skillet recipes on the grill…like homemade macaroni and cheese!

I am definitely going to have to try my iron skillet on the grill. When my grandma passed away that is one of the treasures that I got. I love it, not only that it cooks great meals in it but because of all the memories I had of grandma cooking with it.

I want to make this now! It looks so yummy. I just bought a medium size cast iron skillet. My mother has always made our meals in a cast iron skillet. They are the best! Now to save up for the cast iron pot:) Beautiful post Alice. Looks like a great day to me.
